Made from a simple blend of corn, coconut milk, sugar, and cinnamon, this dessert is slow-cooked until it reaches a perfect, pudding-like consistency. It’s a beloved classic for a reason!

n the Samaná region, you might even find it with a special twist, like a hint of vanilla or a touch of bright lemon zest. This recipe carries a deep legacy; generations ago, my grandfather prepared it using the very corn he produced on his land. Instead of the corn flour commonly used today, he would grate the fresh kernels and squeeze out the natural liquid, simmering it in a pot with hand-picked spices until it reached perfection. It was a staple of the home, served as a hearty breakfast, a comforting dinner, or simply enjoyed as a sweet dessert.

Everyone has their own favorite way to enjoy it: some prefer it thick enough to eat with a spoon, while others like it more liquid so they can sip it slowly from a cup. Whether you serve it steaming hot from the stove or enjoy it cold straight from the refrigerator, it remains a delicious and perfect finish to any meal, capturing the soulful flavors of the Dominican Republic in every spoonful.
